This is a regular in my house. Double the recipe for leftovers!<\/p>\n<p>(Serves 4)<\/p>\n<p>1 lb fully cooked andouille sausage, sliced<br \/>\n1 onion, sliced thin (color of choice)<br \/>\n3 bell peppers, thinly sliced (color of choice)<br \/>\n3 garlic cloves, chopped<br \/>\n1 T. olive oil<br \/>\n1 t. kosher salt<br \/>\n1\/2 t. freshly ground black pepper<br \/>\n1 t. paprika<br \/>\n1 t. dried oregano<br \/>\n1\/2 t. chili powder<br \/>\n1\/4 t. ground cumin<\/p>\n<p>Preheat oven to 400, line a sheet pan with parchment paper. Add peppers, onion, garlic, and seasonings to pan. Coat veggies with oil and mix well.<br \/>\nRoast for 12 minutes, turning veggies halfway through cook time.<br \/>\nRemove pan from oven and add sliced sausages.
