{"id":305,"date":"2021-05-20T22:41:42","date_gmt":"2021-05-20T22:41:42","guid":{"rendered":"http:\/\/gritology.com\/blog\/?p=305"},"modified":"2021-08-07T04:41:20","modified_gmt":"2021-08-07T04:41:20","slug":"salmon-avocado-super-salad","status":"publish","type":"post","link":"https:\/\/gritology.com\/blog\/recipes\/salmon-avocado-super-salad\/","title":{"rendered":"Salmon Avocado Super Salad"},"content":{"rendered":"<p>This is another go-to, for the family AND for guests.\u00a0 Everyone loves it and it&#8217;s super healthy!<\/p>\n<p>Serves 2-4<\/p>\n<p>Quinoa<\/p>\n<p>2 filets wild-caught salmon, skinned<\/p>\n<p>1 pint grape tomatoes<\/p>\n<p>1\/4 C cilantro<\/p>\n<p>1\/2 bunch scallions<\/p>\n<p>1\/2 red onion<\/p>\n<p>2 limes<\/p>\n<p>1 T. apple cider vinegar<\/p>\n<p>1 avocado<\/p>\n<p>2 T. olive oil<\/p>\n<p>Salt\/pepper<\/p>\n<p>&nbsp;<\/p>\n<p>Cook quinoa according to package directions for two servings (I use chicken broth instead of water when cooking quinoa.)<\/p>\n<p>Rinse salmon and pat dry with paper towel.\u00a0 Season both sides with salt &amp; pepper.\u00a0 Heat 1 T olive oil in fry pan over medium heat.\u00a0 Sear until browned on outside and slightly opaque &#8211; about 5 minutes per side.<\/p>\n<p>Meanwhile, juice limes into a large bowl. Halve tomatoes, finely chop cilantro and scallions, peel red onion and mince. Add to bowl along with 1 T. olive oil and vinegar. Toss to combine. Stir in cooked quinoa.
