Keep food waste down with multiple options for lunches and dinners with these ingredients:

Chicken breasts – season with s&p, seasoning of choice
BBQ Sauce
Pineapple, cut into bite-sized pieces
Red Onion, sliced thin
Shredded cheese
Nuun, Pita, or Flatbread
Optional:
Celery
Cashews

 

BBQ Chicken:
Pan fry or grill chicken breasts till just about done. Brush with BBQ sauce and cook till juices run clear.
Serve with grilled vegetables and/or add sauteed red onion and celery into cooked rice.

 

Pineapple BBQ Chicken Flatbread:
Spread BBQ sauce evenly onto Nuun, pita, or flatbread
Top with shredded leftover chicken breast, red onion, pineapple, and shredded cheese. Optional: chopped cilantro
Grill or broil until desired doneness.

Chicken Stirfry:
Saute vegetables and pineapple in wok or pan (add optional vegetables.) Add leftover chicken, pineapple, and optional cashews until heated through. Mix in soy sauce or stirfry sauce. Serve over rice.

BBQ Chicken Nachos:
Preheat oven to 400. Line baking sheet with parchment paper. Toss shredded chicken with BBQ sauce. Layer with tortilla chips, shredded cheese, red onion.
Bake until cheese is melted around 15 minutes. Top with cilantro, if desired.
