I remember many days digging deep in the pantry for something to eat till payday. Hope these ideas help!
- Brinner! (Breakfast for dinner) Oatmeal, Cereal, frozen waffles, or any other easy breakfast!
- Peanut butter & jelly sandwiches (toasted, if desired)
- Tuna fish sandwiches (or on lettuce)
- Grilled cheese – add a slice of deli ham if on hand. Also, add tomato soup, if desired.
- Breakfast burritos – Add scrambled eggs, salsa to a burrito. And cheese!
- Eggs & Grits (add bacon or sausage if desired) Mix all together. 😉 Childhood fav!!
- Quesadillas – Add anything you have on hand like lunch meat, veggies, or just plain cheese.
- Poor Man Chili – Add a can of black beans, small jar of salsa to cooked rice. Heat. (I like to add a bit of soy sauce)
- EZ Bean burritos – 1 can pinto and/or black beans drained, 1 packet taco seasoning, 1 can diced tomatoes (w/green chilis), 8 oz. cream cheese (or any cheese of choice). Combine in a skillet till cheese melts, spoon into a tortilla.
- Noodles and butter. (Optional: add diced ham, parm cheese)
- Stirfry – Rice, a bag of frozen stirfry veggies. Stir in whisked eggs.
- Roaster chicken – As is or…. Shred and serve with a salad; Shred into chicken broth and rice; Chicken Salad; BBQ Flatbread: toast a pita, add BBQ sauce, red onion, chicken, and cheese. Broil or grill; Add to stirfry (my fav- rice/pineapple/celery/cashews); Hatch chicken enchiladas (recipe on can)
- Spaghetti and pasta sauce
- Sausage and Potatoes – any chicken sausage/kielbasa with oven fries
- Sausage and Peppers – add rice for more bulk
- Salad – add veggies on hand or buy the cheapest fresh veggies. Make homemade croutons (saute bread cubes in oil/butter/garlic salt) and hard-boiled eggs. Homemade dressing with lemon juice or balsamic (or any vinegar) and oil, dijon, s&p.
- Sloppy Joes – brown 1 lb. ground beef (drain) add 1/8 cup brown sugar, 1/8 cup mustard, 1/2 cup ketchup.
- English Muffin Pizzas – pizza sauce, pepperoni, mozzarella.
- Creamy Tomato Angel Hair Pasta – angel hair pasta, pasta sauce, cream cheese (softened) Warm sauce/cheese. Pour over pasta. Optional: top with Parmesan cheese.
- EZ Beans ‘n Rice – Saute 1 chopped onion, 2 cloves garlic in olive oil. Add 1 C cooked rice, 1 t. cumin, 1/4 t. cayenne pepper, 2 cans drained black beans.
