This is a great recipe to get your kids to eat vegetables!
1 bunch fresh carrots (rainbow carrots from a farmer’s market would be perfect!)
3 T olive oil
1/2 t. coarse salt
Directions:
Heat oven to 400.
Wash, but don’t peel, the carrots. If carrots are large, slice in half. Toss them in olive oil and salt and place on a sheet pan with parchment paper.
Roast for 30-35 minutes until cooked through and beginning to brown.
