1 cup uncooked quinoa, follow directions on package

12 oz Kielbasa or sausage of choice, sliced into 1/2 inch pieces

1 yellow onion, chopped

2 tablespoons chopped fresh sage

1 cup organic apple or pear hard cider

1/2 cup dried cranberries

1 teaspoon fine sea salt

2 cups chopped kale or spinach

 

In a large pot, cook sausage, onions, and sage over medium-high heat until just browned, about 10 minutes. Add cider, cranberries, salt, kale, and cooked quinoa. Cover and set aside off of the heat for 5 minutes. Uncover, fluff with a fork, and serve.
