(Serves 6)
Salad:
1 package spinach (1-2 C per person)
red onion, sliced thin
6-12 slices crispy bacon, crumbled
6 hard-boiled eggs, sliced
~Combine all ingredients in a salad bowl or individual bowls
Dressing:
2/3 C. organic canola oil (or oil of choice but I found olive oil too strong)
1/3 C. red wine vinegar
1/3 C. sugar or 6-8 drops liquid stevia
1/3 C. ketchup
1/3 C. red onion
4 pieces crispy bacon, crumbled
1 t. Worcestershire sauce
~Combine all ingredients in a pot, warm over low heat until ready to serve.
