w/Creamy Maple Dressing

Serves 8


20-25 medium/large Brussel sprouts
½ C. pumpkin seeds (also known as pepitas)
1 ½ C toasted pecan halves
1 large crisp apple, sliced
1 ½ C. craisins or dried cherries
1 pomegranate, seeded

1. Slice Brussel sprouts thin or shave with a mandoline, put them in a bowl.
2. Toss in remaining ingredients, adding dressing just prior to serving.


1/4 cup mayonnaise
1/4 cup olive oil
1/4 cup maple syrup
1 tbsp stone ground mustard
1 tbsp apple cider vinegar
1 tsp sea salt
1/4 tsp black pepper

In a small bowl, whisk together all ingredients until smooth. Store in an airtight container in the refrigerator for up to 2 weeks.
